Ingredients for Stir-Fry:
- 17.6 oz Jasmine Rice, cooked - (500g) or Basmati (Long grain rice)
- 7.9 oz Firm Smoked Tofu - (225g) Sliced into four slabs
- 2 tbsp Thick Sweet Soy Sauce - (25ml) for tofu glazing
- 1 Red Bell Pepper - diced
- 2 Banana Shallots - diced
- 3.5 oz Peas - (100g) or snap peas
- 3.5 oz Sweetcorn - (100g)
- 3.5 oz Carrots - small dice
- 1 Red Chilli - finely sliced
- 1 tbsp Ginger Garlic Paste
- 3 tbsp Seasame Oil - (25ml)
Ingredients for Stir-Fry Sauce:
- 4 tbsp Shaoxing wine - (50ml)
- 2 tbsp Soy Sauce - (25ml)
- 2 tbsp Sweet Chilli Sauce - (25ml)
- 1 Lime - juice only
Garnish:
- 2 Scallions - sliced
- ½ cup Fresh Coriander - chopped
- 1 tbsp Kalaungi Seeds
- 1 tbsp Sesame Seeds
Instructions:
- Begin by whisking together all the ingredients for the sauce. Next, prepare the vegetables, ensuring each type is kept separate for its respective step in the recipe.
- In a frying pan or wok, heat 1 tablespoon of sesame oil over high heat. Add the sliced tofu and sear until each side is golden brown.
- Lower the heat, then drizzle 1 tablespoon of sweet soy sauce over the tofu, ensuring it's coated on both sides. Watch closely to prevent burning as the sauce caramelizes.
- Once caramelized, remove the tofu from the pan, let it cool, then cut it into bite-sized cubes. Set aside. Wipe down the pan to prepare for the next steps.
- In the same pan, heat 2 tablespoons of oil over medium heat. Add the diced banana shallots and sauté until translucent, about 5 minutes.
- Incorporate the ginger-garlic paste, stirring continuously for a minute until aromatic.
- Increase the heat to high, then add the diced carrots and red peppers. Stir-fry until they soften and begin to take on colour. Season with a pinch of salt.
- Mix in the peas, sweetcorn, and sliced chili, cooking for an additional 2-3 minutes.
- Pour in the prepared sauce, letting it simmer for a minute. Then, reintroduce the cubed tofu to the pan, stirring gently to heat through.
- Add the cooked rice, stir-frying to combine and heat everything evenly.
- Transfer to a serving dish and garnish with sliced scallions, coriander, nigella seeds, and toasted sesame seeds. Serve your special fried rice hot and enjoy!
