Every Polish recipe on this site sends you out to buy twaróg at some point. The sernik wants a full kilo of it, the pierogi ruskie want it dry and crumbly, the leniwe want it firm enough to hold a dumpling together. And outside Poland that is the hard part: it is patchy in the shops, it is expensive when you find it, what does get imported has usually been travelling a while, and the quark most supermarkets sell is far too wet to stand in for it.
So make it. There are two things in it, milk and a bottle of soured milk, and no rennet, no starter culture to order and nothing you do not already own. Two litres of whole milk gives you about 500 g of cheese, which is exactly what one Polish tub holds, and the only real skill is leaving it alone for two days.
The one number that matters is 50 C. Everything else on this page is either why that number is the number, or what happens at the other end when you decide how long to drain it, which is the step that quietly turns one recipe into four different cheeses.

Twaróg is a fresh curd cheese set by acid alone. No rennet goes anywhere near it: the bacteria in the soured milk eat their way through the lactose, the milk turns steadily more acid, and at a certain point the proteins simply give up holding each other apart and knit together into a curd. Warming it afterwards only tightens what the acid has already done.
That sounds like a technicality and it is the whole reason Polish cooking has this cheese. An acid-set cheese does not melt. Heat it and it gets drier and firmer instead of running, because the first thing driven out of it is water rather than protein. It is the same reason paneer can be fried like a piece of meat. It is why a kilo of twaróg can be baked into a sernik and come out as cake rather than a puddle, and why it survives being sealed inside a pierog and boiled.
It also means you cannot swap in a melting cheese and expect the recipe to behave. That is not snobbery about authenticity, it is physics.
A Closer Look at the Ingredients
- Whole milk 2 litres, and this is the single decision that changes the cheese. Almost all the fat in the milk ends up in the curd, so the milk you start with sets both how rich the cheese is and how much of it you get. Full fat organic gives the best of both. Buy the freshest full-fat milk you can, organic if it is going, and check it is not UHT. Long-life milk has been heated so hard that it will not reliably set at all, and it is the one thing every source on this dish agrees about. Instead: semi-skimmed works and gives a leaner, drier cheese, which is fine for pierogi and disappointing on bread. Skip it entirely if you have raw milk, which will sour on its own.
- Zsiadłe mleko or kefir 250 g, and it is doing the same job either way: seeding two litres of fresh milk with the bacteria that will sour it. Zsiadłe mleko is Polish soured milk and is the traditional choice; kefir is easier to find and works exactly as well. Polish shops have both, and larger supermarkets carry kefir beside the yoghurt. Instead: plain full-fat live yoghurt or cultured buttermilk both work. Buttermilk is the one to avoid if you want a rich cheese, because it is usually near fat-free and the result comes out noticeably lean.

Equipment You’ll Need
Nothing specialised, and the only thing worth buying if you do not have one is a thermometer, because this recipe is a temperature rather than a time.
Step-by-Step: How to Make Twaróg
1. Combine the milk and the starter
Pour the two litres of milk into your larger pan and tip in the soured milk or kefir. Whisk it until it looks like one thing rather than two, because a starter sitting in streaks sours the milk unevenly and you get a patchy set. Cover the pan with a lid or a plate. It does not need to be airtight, it just needs to keep things out of it.
2. Leave it for 48 hours
Put it somewhere out of the way at room temperature and forget about it for two days. What is happening in there is the whole recipe: the bacteria are eating the milk sugar and turning it into acid, and the milk has to travel a long way down the pH scale before anything visible happens. It is ready when it has set to a soft, even wobble like a loose yoghurt, and smells clean and sour rather than sharp or yeasty. A cold kitchen just takes longer. If yours is at 18 C rather than 22 C, give it another day rather than moving it somewhere hot, and do not decide at 24 hours that it has failed.
3. Warm it to 50 C
Put the pan on the lowest heat your hob will hold and bring it up slowly, whisking now and again so the heat spreads and nothing catches on the base. Somewhere on the way you will see it break: the white solids draw together into soft curds and the liquid around them goes clear and faintly green. Take it off the heat the moment it reads 50 C. No thermometer? The pan should stay cool enough that you can still hold it with both palms the whole time. That is not folklore, it is a good proxy for this temperature, and it is how this was done for centuries before anyone owned a probe.
4. Let it cool down
Leave the pan alone for a couple of hours. This step gets skipped in most recipes and it is worth keeping: the curds firm up as they cool, and warm curds are softer, more fragile and more inclined to slip through the weave of the cloth as fine sediment. You lose cheese by being in a hurry here.
5. Drain off the whey
Set the sieve over your second pan and line it with the cloth. Pour the lot in and let it run through, stirring gently with a spoon to open up channels when it slows down. Gently is the word: an acid curd is soft and weak by nature, and stirring it hard breaks it into crumbs that then wash away with the whey. Keep that whey. There will be close to two litres of it and it is not waste, which is its own section further down.
6. Hang it up to drain
Gather the four corners of the cloth and tie them into a bundle, then hang it where it can drip freely with a bowl underneath. A cupboard handle does it, or a wooden spoon laid across a tall pot. Give it three or four hours, until the drip has properly slowed, then move the whole bundle, cloth and all, into a colander set inside a pot and put that in the fridge overnight rather than leaving it hanging out at room temperature until morning, which is how it was done for a very long time before anyone owned a fridge, and how I used to do it too. If you want the firmer cheese you can slice, sit the tied bundle in the colander and put something heavy on top for a couple of hours instead: I use a bowl with a jar of olives standing in it, which is exactly as sophisticated as this needs to be. That is the old way for keeping it longer, a cloth-wrapped cheese between two boards under a stone, which is where the Polish name for pressed cheeses comes from.
7. Turn it out
Untie the cloth and tip the cheese out onto a plate. Hung, it comes out as a soft dome that holds its own shape and breaks into proper crumbs rather than smearing when you press a corner of it. Pressed, it is firmer and flatter, with the weave of the cloth printed across the top, and it will take a knife. Either way it should smell mild and milky rather than sharp. Cover it and keep it in the fridge, and eat it inside three days. It is at its best on the first one.

Use the freshest whole milk you can buy, and never UHT. Long-life milk has been heated so hard that it will not reliably set into a curd, and it is the one failure every source agrees on.
50 C is the whole recipe. Warmer drives water out of the curd and gives you a dry, squeaky cheese; there is no reward for rushing it. No thermometer? The pan should stay cool enough that you can still hold it with both palms.
Boiling it by accident does not ruin the batch. You lose softness, not the cheese. Carry on and drain it as normal.
Draining is the dial. Hung until it stops dripping it stays soft enough to spread and mash, which is what pancakes and bread want. Weighted for two hours it comes out firm enough to slice and crumble, which is what pierogi and leniwe want. Same recipe, different cheese.

The One Temperature That Matters
Look up six recipes for this cheese and you will find six different temperatures, stated as though each one were the only possibility. The published range runs from 36 C to 82 C, and half the recipes give no number at all, just “gently” and “do not boil”. Nobody acknowledges that anybody else disagrees.
There is a real reason to care, and it is what heat does to a curd that acid has already set. The acid has dissolved the calcium holding the milk proteins in their little bundles, and those proteins have bonded to each other instead. When you heat that, the first thing driven out is water, not protein. So gentle heat barely starts the process and leaves a soft, moist cheese. Push towards boiling and you keep driving water out and concentrating what is left, which is the mechanical reason the hot methods produce a firmer, drier and eventually squeaky, rubbery cheese.
It also explains something the recipes never connect: the hot methods report higher yields. The main whey protein unfolds at about 78 C, and once it does it attaches itself to the curd rather than draining away in the whey. Heat past that and you are literally weighing more cheese. You are also making a different, tighter cheese, and you have stripped the protein out of your whey.
50 C sits deliberately on the gentle side of that line. It is a texture decision rather than a yield decision, and it is why the whey that comes off this recipe is still worth cooking with.
And if you overshoot, do not throw it away. Three separate readers on the biggest Polish thread about this cheese have reported letting it boil by accident and getting perfectly good twaróg anyway, one of them posting back the next day specifically so that nobody else would panic. The recipe author herself said she had no idea what to advise. Boiling costs you softness, not the batch.
How Long You Drain It Decides What Cheese You Get
Draining is where you decide what you have actually made, and it is the reason one recipe covers every Polish dish that calls for twaróg. Published methods range from ten minutes in a sieve to a weighted press overnight, and the difference is not quality, it is water.
There are two ways to take that water out and they are not the same thing at different speeds. Gravity on its own, which is a tied bundle left to hang, is the ordinary route for a soft fresh cheese: it works slowly and the curd keeps a good deal of its moisture. A weight pushes out more than gravity ever will, and it compacts what is left. So hanging gives you a soft cheese and pressing gives you a firm one, and the clock is only half the story.
Hung until it stops dripping, which is what this recipe does, leaves it soft enough to spread and mash: right for bread, for a naleśniki filling, or mashed with cream and chives. Left hanging overnight it firms up on its own without ever being compacted. Two hours under a weight gives a firm round you can slice and crumble. That is what you want for kluski leniwe, which need the cheese to carry the dumpling with as little flour as possible, and for pierogi filling, where a wet cheese turns the potato to slop. A weight left overnight gives a genuinely dry block for grating.
The one thing worth avoiding is wringing it out hard in the cloth to speed things up. It works, and it gives you a tight, slightly rubbery cheese with the texture squeezed out of it. Let gravity do it slowly instead.
Twaróg, Ser Biały, Quark or Farmer Cheese?
The same cheese answers to a lot of names and they are not all equivalent, which matters if you are shopping rather than cooking.
Twaróg and ser biały are both Polish for this, and ser biały simply means white cheese. In American shops it is sold as farmer cheese or, in older Jewish-American usage, pot cheese, and either is the right thing to ask for. Tvorog is the same cheese across the Russian and Ukrainian kitchens.
Quark is the one to be careful about. It is a close relative rather than the same product: German and Austrian, usually smoother, usually wetter, and in Britain very often sold fat-free, which is why so many people report it slumping in recipes that expected twaróg. If quark is what you can get, buy the driest, crumbliest one on the shelf and drain it. Or make this instead, which is the entire argument for the page you are reading.
Cottage cheese is not a substitute and no amount of draining makes it one. The curds are washed and dressed with cream, which is a different cheese doing a different job.
The Oldest Cheese Strainer in the World Came Out of Polish Soil
Poland does not get called a cheese country the way France and Italy do. It is also where the oldest known cheese strainer on earth came out of the ground.
A perforated ceramic vessel, probably used for making exactly this, was excavated in Kujawy at Brześć Kujawski and dates to close to the sixth millennium BC. Seven thousand years ago, give or take, somebody in central Poland was pouring soured milk through holes in a pot to separate curds from whey. The method written down in the Polish culinary histories is the one on this page: warm the soured milk, pour it into a linen or cloth bag or a strainer, and wait for the whey to leave. To keep it longer they pressed it between two boards under a stone, which is where the phrase for pressed cheeses comes from.
Which is why kefir and zsiadłe mleko are not quite the same question. Zsiadłe mleko, milk simply left to sour, is the old one: a Slavic staple on Polish lands, drunk cold through the summer, and specifically recorded as what twaróg was made from. Kefir only arrived during the Partitions, coming from the Caucasus through Russian kitchens and spreading in eastern Poland first. Every recipe you will read treats them as interchangeable, and for this cheese they behave the same, but one of them is thousands of years older here than the other.
Do Not Throw the Whey Away
About two litres of whey comes off this recipe and it is the reason to stop calling it waste. Historically it was not: when a farm sold its butter and cheese, the whey and the buttermilk were what stayed in the house, and they were drunk and cooked with.
Because this cheese is set at 50 C rather than 80 C, the whey proteins never join the curd, which means the liquid you have just poured off still has protein in it. That is a direct consequence of the temperature choice further up the page.
Use it instead of water in bread dough, where it is the single most repeated suggestion from people who make this regularly, and it gives a softer crumb. It makes good pancakes and naleśniki batter. It goes into soup. It can simply be drunk cold. And if you want to be thorough about it, whey proteins heated in acid conditions will themselves clot into a second, much smaller cheese, which is what true ricotta is: ricotta means recooked.
What to Make With It
The obvious first use is the one in the photograph: mash it with a spoon, stir in chopped chives and a good amount of black pepper, and put it on bread for breakfast. Add soured cream and finely chopped onion and you have gzik, which belongs to Kujawy and Wielkopolska and is eaten with boiled or baked potatoes as often as with bread.
After that it goes straight into the recipes that sent you here. A full kilo of it, pressed hard and blended smooth, is a sernik, so that one wants a double batch. Weighted for a couple of hours it is the filling for pierogi ruskie, alongside mashed potato and a lot of slowly cooked onion. Storing and Freezing
Fridge, three days. Keep it covered so it does not dry out and take on the smell of everything else in there. It is best on the first day and it gets sourer as it sits, which is fine in cooked dishes and less pleasant on bread.
Freezing splits opinion and the practical answer is that it depends what you are going to do with it. It freezes for about a month and it comes back grainier than it went in, because the ice damages the curd. If it is going into a sernik or a filling where it gets blended or mashed anyway, you will never notice, and plenty of people who make this in bulk freeze it routinely for exactly that. If you were planning to eat it on bread, do not bother.

How much twaróg will 2 litres of milk make?
Around 500 g, which is what a Polish tub holds and enough for one batch of leniwe or a pancake filling. It has been 48 hours and nothing has happened. Have I ruined it?
Almost certainly not, and the usual answer is that it needs longer rather than that it has failed. A cool kitchen slows everything down, and people regularly report a set arriving on day three or four in a cold room. Give it another 24 hours before you do anything. If it still has not moved and you used long-life milk, that is your answer.
I let it boil. Is it ruined?
No. You will get a firmer, drier, slightly squeakier cheese than you meant to, because the extra heat drives more water out of the curd. Several people have reported doing exactly this and getting perfectly good twaróg. Carry on and drain it as normal.
Why is mine dry and rubbery?
Too much heat, too much squeezing, or both. Heating an acid curd concentrates it by pushing water out, so anything much above 50 C tightens it; and squeezing the cloth by hand does the same thing mechanically. Next time stop at 50 C and let it drain in its own time.
Can I use buttermilk or yoghurt instead of kefir?
Yes, both work. Plain full-fat live yoghurt behaves almost identically. Cultured buttermilk works too but is usually close to fat-free, so the cheese comes out noticeably lean and dry, and people who use it often end up adding cream back when it goes into a sernik.
Do I have to use full-fat milk?
No, but it is the main thing you are choosing. Nearly all the fat in the milk ends up in the cheese, so whole milk gives a rich, creamy twaróg and semi-skimmed gives a leaner, drier one. Homemade from whole milk comes out richer than most shop tubs, which are made from milk standardised down to a fat class first.
Can I freeze it?
For about a month, with the caveat that it comes back grainier. That does not matter at all if it is going into a cheesecake or a filling where it gets blended, and it does matter if you wanted it on bread. Freeze it in the portion you will actually use.
Can I halve or double the recipe?
Straight through, in either direction. Keep the starter at roughly one part to eight parts milk and the timings stay the same, because they are set by temperature and acidity rather than by volume. A bigger pan simply takes a little longer to come up to 50 C.
