Swapping out meat for Quorn mince, Chilli Non-Carne boasts a medley of vibrant vegetables, beans, and aromatic Mexican spices. Its rich flavours and satisfying texture have made it a favourite among vegetarians, vegans, and even those who usually opt for meat.

Let me share a chef’s perspective on Quorn. This ground-breaking brand offers meat substitute products crafted from mycoprotein, a unique fungus-derived ingredient. Born in the UK during the 1960s, Quorn was a response to the rising concerns about the environmental and ethical implications of meat consumption. The standout features of Quorn? It’s protein-rich, low in fat, and mimics the texture of meat, making it a top pick for vegetarians, vegans, and those aiming to cut down on meat.
Behind the Scenes: The Creation Process
The magic behind Quorn lies in the fermentation of the fungus, Fusarium venenatum. Once fermented, it’s transformed into a range of meat-alternative products, from burgers and sausages to nuggets.

- 10.6 oz Quorn mince - (300g) defrosted (microwave for 5 minutes)
- 3 Bell Peppers - one of each colour, large dice
- 3 Red chillies - chopped (use green chillies for milder version)
- 3 Onions, medium size - peeled and diced
- 1 Celery stick - small dice
- 4 Garlic cloves - peeled and crushed
- 8.4 oz Kidney beans - (240g) drained
- 3 cups Chopped tomatoes - (700g)
- 4 tbsp Vegetable Oil - (Canola Oil) for frying
- 2 tsp Sugar
- 2 tsp Salt
- 3 tsp Paprika
- 4 tsp Mild Chilli Powder - (reduce to 2 teaspoons for less spicy)
- 4 tsp Ground Cumin
- 1 tsp Oregano
- Set your oven to 240°C (392°F). In a bowl, toss the chopped peppers and chopped chilies with a drizzle of oil and a sprinkle of salt. Spread them out on a baking tray lined with parchment paper. Place in the preheated oven and roast for 15-20 minutes. Once done, remove from the oven and set aside to cool.(Alternatively you can use air-fryer)
- Place a frying pan over medium heat and add 4 tablespoons of oil. Once the oil is hot, add the diced onions and sauté for about 5 minutes or until they become translucent.
- To the pan, add the minced garlic and finely diced celery. Season with a pinch of salt and turn up the heat slightly. Continue to cook for another 5 minutes, or until the onions are nicely browned.
- Stir in the defrosted Quorn mince along with the paprika, chili powder, and ground cumin. Add 1 teaspoon of salt. Fry this mixture for about 5 minutes, stirring frequently.
- Mix in the kidney beans and a pinch of dried oregano. Let it cook together for another 2 minutes.
- Gradually pour in the chopped tomatos to the pan, allowing the mixture to come to a gentle simmer. Cook for an additional 5-10 minutes. Taste and adjust the seasoning as necessary.
- Ladle the chili into bowls and garnish with fresh coriander. Serve with accompaniments like tortilla chips, sour cream, sliced jalapeños, shredded cheese, and tomato salsa.
- Consistency Adjustments: If the chili is too thick, add vegetable broth or more tomato sauce to reach your desired consistency. If it’s too thin, let it simmer uncovered to reduce and thicken.
- Spice Blend: Customize your spice blend. Aside from cumin, paprika, and chili powder, consider adding a bit of cinnamon or cocoa powder for a complex flavour profile.
- Grilling Peppers: Grilling peppers enhances their sweetness and imparts a smoky flavour due to caramelization, while also preserving their texture. As an alternative, you can sauté the peppers with onions in a pan, although this may require a longer cooking time for the chili to develop the same depth of flavour.
- Quorn mince substitution: If Quorn mince is unavailable or you’re seeking an alternative, soya mince is a suitable substitute, offering a similar texture and protein content. Alternatively, you can increase the quantity of kidney beans and black beans in the recipe. These beans not only add a rich, hearty element to the chili but also boost the fiber and nutrient profile of the dish.
