Equipment:

Ingredients:

  • 3 Chicken breasts - medium-sized, each breast sliced into cutlets
  • 3.5 oz Plain flour - (100g)
  • 12 Cherry tomatoes - halved
  • 5.3 oz Sun dried tomatoes - (150g) finely diced
  • 2 tbsp Olive oil - (you can use olive oil from the sun-dried tomatoes)
  • 1 oz Butter - (30g)
  • 4 Garlic cloves - finely diced
  • 0.21 quarts Vegetable stock - (200ml)
  • 0.31 quarts Heavy cream - (300ml) double cream
  • 1 oz Parmesan cheese - (plus an additional 10g for garnish)
  • 1 tsp Tomato puree
  • 1 tbsp Oregano
  • 1 handful Basil leaves - for garnish
  • 1 tsp Chilli flakes - (optional for heat)
  • Salt - to taste
  • Black Pepper - to taste

Instructions:

  • Preheat the oven to 140C (284F) and place sliced cherry tomatoes on the tray. Drizzle them with olive oil, salt and black pepper. Slow-roast for 45 minutes.
  • Season sliced chicken breasts with salt and coat them in plain flour. Place the chicken on a plate, do not to stack the slices, as they may stick together.
  • In a frying pan, heat olive oil and butter over medium-high heat. Once the butter has melted, pan-fry the chicken breasts until both sides are golden brown. You may need to do this in few batches. Transfer the cooked chicken to a plate and cover it with another plate to keep it warm.
  • In the same pan add diced garlic and sauté for one minute. Next add vegetable stock and stir to remove any bits stuck to the pan.
  • Add heavy cream and parmesan cheese, then simmer for 2 minutes. Mix in 1 tsp of tomato puree, and season with oregano and chilli
  • Add chopped sun-dried tomatoes and return chicken to the pan, continue to simmer until the sauce thickens. Season with salt and pepper to your taste.
  • Garnish the dish with semi-dried cherry tomatoes, fresh basil leaves, and a sprinkle of parmesan cheese. Serve with pasta, rice, pearl barley or boiled potatoes. Enjoy!

Notes:

  • Choosing the Chicken: Opt for high-quality chicken breasts that are firm, plump, and free from any signs of spoilage.
  • Reheating Tips: To reheat the chicken, gently warm it in a frying pan with a splash of water to maintain the sauce's integrity. It's advisable to avoid microwaving, as it might cause the sauce to separate.
  • Serving Style: For an added romantic touch, select smaller chicken breasts and carve them into a butterfly cut, which gives a heart-like shape.
  • Wine Pairing: Enhance the flavour of Marry Me Chicken with a glass of red wine, such as Merlot or Pinot Noir, or a white like Chardonnay.
  • Temperature: Remember to always use a food thermometer to ensure that the chicken reaches an internal temperature of 74C (165°F) to ensure that it's fully cooked and safe to eat
