Polish Gołąbki: Stuffed Cabbage Rolls Recipe

Traditional Polish stuffed cabbage rolls: pork and rice wrapped in blanched cabbage leaves and braised slowly on a bed of bacon. Serve with tomato or mushroom sauce. Better still on the second day.

Ingredients

For the gołąbki
500 g Pork shoulder - minced, or use turkey instead
4 Bacon - slices
2 Sweetheart Cabbage - or 1 Savoy Cabbage
375 ml Vegetable broth - Poultry broth works as well
3 Medium onions - finely diced
1 tbsp Vegetable oil
2 tbsp Breadcrumbs
200 g Long grain rice - about 600 g cooked; pearl barley is a good substitute
2 tsp Salt
1 tsp Black pepper
For tomato sauce
25 g Butter
2 tbsp Plain flour
400 ml Braising liquid from the pot - hot, top up with stock if short
3 tbsp Tomato puree - or 150 ml passata and 1 tbsp purée
1 pinch Sugar - to taste
2 tbsp Soured cream - optional

Method

Prepare the filling. Cook the rice and mix with the minced meat. In a pan, sauté the onions in oil until they turn golden. Add to the meat and rice mixture. Incorporate salt, pepper, and breadcrumbs. Combine thoroughly.

Preparing the cabbage. Prepare large pot, pour water up to 1/3 of its height and boil it.For Sweetheart or Savoy Cabbage: Simply blanch the leaves in boiling water for 2 minutes. Trim the thick nerve in the middle of each leaf.For White Cabbage: Removing the hardest part of the stem with a knife. Place the cabbage in boiling water, after two minutes, turn the leaves upside down and wait for another 2-3 minutes before removing. You can start rolling while waiting for the cabbage.Reserve the smallest leaves and core part for laying the baking dish

Filling. Make a ball of meat & rice stuffing in your hands and transfer it to a leaf. Place it at the bottom part of the leaf. Fold the leaf sides toward the centre. Roll the cabbage roll tightly. Roll all cabbage rolls until you run out of stuffing.

Cooking. For the stovetop method: Using the pot previously employed for blanching the cabbage, layer the bottom with bacon slices followed by smaller cabbage leaves. Position the rolls on top, add the broth, cover the pot, and allow it to simmer gently for approximately 1.5 hours.Oven-baked method: In a Dutch oven or another oven-safe dish, arrange bacon slices and small leftover cabbage leaves at the base. Position the rolls snugly next to each other. After covering, bake in an oven that's been preheated to 180°C (356°F) for 50 minutes. Then, uncover the dish, drizzle your preferred sauce (either tomato or mushroom) over the rolls, and continue baking for an additional 20 minutes.Slow-cooker method: In your slow cooker, begin by layering bacon slices and smaller cabbage leaves. Add a thin coating of tomato sauce to avoid the Gołąbki sticking, then systematically layer the Gołąbki, covering them with the remaining sauce and topping with additional cabbage leaves. Set to cook on low for 6 hours or, if short on time, on high for 3 hours. When finished, exercise caution when removing the tender Gołąbki.

Make the sauce and serve. Lift 400 ml of the liquid out of the pot and keep it hot. Melt the butter in a small pan, stir in the flour and cook it for a minute, then take it off the heat before you add any liquid. Whisk the hot braising stock in a ladle at a time, letting each one come together before the next, or you will get lumps. Back on the heat, stir in the tomato purée and simmer gently for five minutes. Season, add a pinch of sugar if the tomato is sharp, and stir in the soured cream off the heat if you are using it. Let the gołąbki settle for ten minutes before lifting them out, then serve with the sauce over them and plenty of dill or parsley. Smacznego!

Chef’s notes

The liquid looks wrong and is not. 375 ml will not cover the rolls, and it should not. Packed tight under a lid they braise in steam; a pot filled with stock gives you watery rolls and a thin sauce.

Line the pot and cover the top. Bacon and the small inner leaves underneath stop the bottom layer catching. A few spare leaves laid over the top stop the uppermost rolls drying out.

Do not work the filling. Fold it together until it is just combined. Overmixed mince goes springy and stays that way.

Cook the rice first. Raw rice keeps swelling in the pot and splits the leaves.

Yield: about 17 to 20 rolls from a large sweetheart cabbage. Any filling left over once you run out of leaves fries well as small patties.

They are better the next day. Cool them quickly, refrigerate, and reheat gently until piping hot through.

Salt the blanching water, and keep it plain. Salt speeds the softening; acid slows it right down, which is why the tomato sauce goes on at the end rather than the rolls being cooked in it from the start.
